Baked Swiss Chicken
Ingredients
1 pk Stove Top Stuffing Mix for chicken
4 boneless skinless chicken breasts, cubed
1 cup shredded swiss cheese
1 can cream of chicken soup
Directions
Preheat oven to 400 degrees.
Prepare stuffing mix as directed on package and put aside.
PLace chicken in a 9x13" baking dish.
Top with cheese, soup and stuffing. Veggies can be added here.
Bake about 30 minutes, until chicken is cooked.

Super Easy Chicken Chilli

Ingredients
2 lbs boneless skinless chicken breast (4-5 pieces) 1 can of beans, black-eyed peas, or pinto beans 1 jar organic salsa 1 tsp cumin Monterey Jack cheese Directions In a slow cooker add cubed chicken, beans, salsa and cumin. Cook low for 6 hours or high for 4 hours. Shred cooked chicken and top with cheese. Add a splash of hot sauce. Melt on warm for a few minutes before serving. Serve with crusty bread or nachos. |
Easy Peasy Granola
Ingredients
8 cups large flake oats 3/4 cup almond butter 3/4 cup melted coconut oil 2/3 cup pure maple syrup 2 tbsp pure vanilla extract Cinnamon Directions Preheat oven to 250 degrees. Mix all ingredients together and spread onto a baking sheet. Sprinkle with cinnamon to taste. Bake for 40 minutes. Let cool and granola will crisp once cooled. |
